It offers longer shelf life, cost-effectiveness, and convenience over fresh onions, making it a preferred choice in industrial food processing and culinary applications.
Only premium-grade, fully matured red onions are selected. These onions are chosen for their high color intensity, strong aroma, and sweet pungency. The onions are washed to remove dirt and impurities. They are then peeled using mechanical methods or steam peeling to maintain hygiene and prevent contamination. Onions are chopped into small cubes or chunks of uniform size (generally 3–5 mm) using stainless steel, food-grade equipment.
The chopped onions are dried using continuous conveyor belt dryers at 60–70°C, reducing moisture content to below 6%. This ensures shelf stability and preservation of flavor. The dried chopped onions are screened to remove dust, fines, and oversized particles, ensuring a consistent product size.
Every batch is tested for color, aroma, moisture content, microbial levels, and compliance with food safety regulations (FSSAI, HACCP, FDA, ISO). The product is packed in moisture-resistant, food-grade packaging such as poly-lined kraft paper bags or HDPE drums. Standard packing sizes are 10 kg and 20 kg, with custom options available.
